Mac & Cheese Light

1 pound elbow macaroni¾ pound cheddar or colby or a combination of both cubed ½ c. Grated Parmesan or Grated Romano 6 eggs 1 can (4oz) sweet diced green chillies 3 c. Milk ½ teaspoon of salt ¼-½ teaspoon of ground white pepper

Oven 350

Butter or sprinkle the pam in a deep saucepan or baking dish.

Prepare the macaroni following the instructions on the package. Drain well and set aside.

In a bowl, combine the Parmesan, eggs, green chillies, milk, salt and pepper. Whisk until combined.

Add the macaroni and diced cheese to the pan. Stir well to mix macaroni and cheese.

Pour the milk and egg mixture over the mac & cheese.

Place on a baking sheet to avoid boiling and cook for 50-55 minutes.

If you like the creamy top, cover loosely with foil for the last 20 minutes. No foil for a slightly crunchy top.
