A crackling Burns Night menu of haggis mac and cheese, winter slaw and alcoholic chocolate brownies

Let’s raise a glass for the winter and enjoy the fact that there is still some joy to be experienced in these dark days, at least when it comes to food.

I love haggis (much more interesting than a sausage and on a par with a good black pudding), and it’s a product that deserves to be eaten and appreciated by more than us. It makes use of less fashionable parts of the animal, is heavily seasoned, and is textured with oats – frying fatty slices to add to my mac and cheese is time and money well spent.

The winter slaw on the side is a punchy mix of raw grated vegetables with a good amount of Dijon and vinegar to flavor it; mayonnaise would be excessive.

And to finish off a meal in honor of the Scottish bard, pear brownies, chocolate and whiskey – a magical combination of ingredients for a mouth-watering dessert.
